01 / ABOUT THE PLACE

About this place

For lunch, the fish set meals immediately showcase the quality of the kitchen's market sourcing. At Ginban, the popular lunch combination of sashimi and grilled fish brings together the aroma of tender, fatty grilled mackerel with vibrant sashimi slices delivered directly from the market. Alongside comes the tonjiru, a pork and vegetable soup carrying a subtle, satisfying sweetness that makes the soup itself worth the trip. A warm cup of kombucha kelp tea served upon seating provides a soothing start to the meal.

The seafood choices extend well beyond the basics. Depending on the day, selections may include simmered fish cooked down in a deep master broth, famous himono dried mackerel from Koshida Shoten, or dried fish from Onahama Bansuke in Fukushima Prefecture. Seafood rice bowls topped with an array of fresh fish are another lunchtime draw, presenting the season's ocean flavors over rice.

Seating is largely arranged in private rooms, allowing guests to dine at their own pace in a calm atmosphere. In the evening, dinner features seasonal fish hot pots and à la carte dishes paired with an attentive selection of Japanese sake and rare pours, including beer aged in Yamazaki or Hakushu whisky casks.
